Leek and potato soup :) yummmm

Okay so I haven't blogged recently cos its been Christmas and yes.... Busy busy. But I thought I would share with you one of my favourite #nutfree meals :)

Ingredients:
1 Onion
2 Large Potatoes
1 Carrot
2 Leeks
Oxo Chicken Stock Cube
50ml of Milk
1 Nob Of Butter
1 Garlic Clove
Black Pepper
Salt

Method:

1. Chop potatoes into small cubes, put on to boil for 5-7 minutes.
2. Chop leeks, Onion and Carrot into roughly the same size as the potato.
3. To a pan add the butter and garlic till butter is melted. Then add your leeks onion and Carrot.
4. Sweat the veg of until soft.
5. Add a pinch of salt and black pepper.
6. Add in the cooked potatoes and add 500ml of hot water and an oxo stock cube.
7. Boil until all veg has softened, Add your 50ml of milk and stir when needed. (If so add extra pepper and salt to preferred taste.)
8. Poor ingredients into blender or preferably use a hand blender until mixture is smooth/ lumpy if preferred.
9. Serve with Hovis bread if wanted.

And wooooo tasty lunch or dinner. Aproximate cooking time is 20 minutes.

Butter: Asda Smart Price. Stock Cube: Oxo Chicken. Black Pepper: Asda Smart Price. Bread: Hovis Medium White.

Snacks :)

Firstly i'd like to aplogize for being absent for the last month: I have been suffering from a B12 deficiency, which has ment i find it very difficult to get out of bed and be bothered to do anything!!

As it's the Christmas season, i have decided to blog about PARTY FOOD/ SNACKS/ NIBBLES/ CHIRSTMAS RECIPES. In a four part thing starting today and finishing up on Christmas eve!! For all you crimbo lovers like me, the one thing i adore is Christmas dinner and a Christmas buffet!!

SNACKS!!

1. Dorito's: At a party you need a good crisp something to crunch on!! Something that you can quickly snack on to give you that much needed salt as alcohol and deminished your salt levels!! Dorito's walkers i find to be such a good christmas essential. They are also great in making nacho's add some cheese, sour cream, home-made salsa and walaaaarr a lovely mexican dish to go before fajitas. (cannot spell btw). I tend to stick with either, Cool Original, Lightly Salted or Tangy Cheese. If your a serious heat devil then Chilli Heatwave is the one for you ;) But the others are bloody delicious!!

2. Pringles: A good christmas buffet, deserves some pringles. As the saying goes once you pop you can't stop ( once i open a packet, they are gone within an hour). They are nut free , i personally have onl;y tried the salt and vinegar variety but i'm sure some of the others are completley safe.

3. Dips: Got to have a dip to go along with these snacks!! Asda do a sour cream and chive dip which is free from nuts, they also do a garlic and onion dip!! (which i have yet to try) But the sour cream and chive dip is completley safe!!

That is all my snacks i eat during the festive period!! Oh and some kinnerton chocolate ;)
